Team Best Finish at the Des Plaines Winter Burn-off

Dig the Pig kicked off the 2011 BBQ Season at the Des Plaines Winter Burn-Off on February 20th with it’s best showing ever!  Braving the elements and working short-handed, DTP Team Members Pete Collins, Ted Koulentes, Tom Strong, and James Borja smoked their way to a solid 8th place finish overall.  The 8th place ribbon was earned thanks to impressive showings in sausage (2nd), chicken (5th), and pork tenderloin (6th).

What do you do when budgetary pressures force the cancellation of a long held tradition?  Well, you step up to the plate and deliver; and boy did Dig the Pig ever Deliver!

At New Trier’s Northfield Campus, Principal Jan Borja has annually held a beautiful Holiday lunch highlighted by the angelic voices of the Freshman choir classes  on the Friday before winter break.   As Jan approaches her retirement in the summer 0f 2011, Dig the Pig wanted to make sure that her holiday tradition continued and that she would be sent off with her best holiday lunch ever.

Working with other campus leaders and Sodexho, Dig the Pig Team Members Pete Collins, James Borja & Ted Koulentes raised funds to pay for the holiday meal and planned our largest cook ever.  On December 16th & 17th 2010, Dig the Pig wound up brining, rubbing down & smoking 10 turkey breasts & 6 pork shoulders overnight, producing over over 130 pounds of succulent and mouth watering BBQ that fed close to 300 faculty & staff!  With the beautiful sounds of the student choirs serenading Mrs. Borja in tribute of her many years of devoted and selfless service to the New Trier Community and the BBQ magic of DTP, there were few dry eyes but many a full belly.

Many thanks goes out to all the other New Trier faculty and Staff who helped by bringing in pot luck side dishes and desserts.  DTP also thanks Joe Sperra of Al’s Meat Market for picking out some fine cuts of meat for the meal as well as allowing DTP to use his Good One smoker.
